Just before the Covid-19 variant Omicron shuts down Israel’s borders to foreign visitors, Ahmad Belhoul Al Falasi, the Minister of State Entrepreneurship from the United Arab Emirates, visited Israel for a whirlwind tour to cement the Abraham Accords.

The Abraham Accords is a treaty between Israel and the United Arab Emirates and the United States reached on August 13, 2020 to develop sustainable business relationships between Israel and the UAE. The hope is peace treaties between Israel and other Arab states. So far relationships have started in energy and water

Mid-November, Al Falasi visited the city of Tel Aviv, guided by the Israeli Minister of Tourism Yoel Razvozov and Mayor of Tel Aviv-Yafo Ron Huldai. As part of the tour, they visited the Peres Center for Peace and Innovation in Jaffa, on the way they stopped at the observatory deck in Jaffa to take in the views of Tel Aviv.

Mayor Ron Huldai then showed Israel’s guests around the Rothschild area, where history meets modernity, explaining its current significance for the city. We hope they didn’t get hit by electric bikes while they were walking because the city is fraught with violent speeding electric bikes and mopeds that neither the city nor the police can control.

The delegation continued onto “The Library” – located in an historic building off of the boulevard and founded by the the municipality, it provides a working space for startups and entrepreneurs.

Founders of Tel Aviv start-ups got the chance to meet the reps from the UAE and expressed wanting to meet with them all again soon. With shared problems such as water, and combined talents and resources: start ups and energy, the United Arab Emirates and Israel could do extraordinary things in clean tech, energy and water.

Cook Shulbatto, a vegan Druze bulgur pilaf

Shulbatto, Druze Bulgur Pilaf

Bulgar wheat, or burgul as it’s known in the Middle East, begins as husked wheat grains. Farmers – or more likely, their wives – boil the grains for one hour, then dry them. The processed wheat grains are then take to the local mill for grinding into fine, medium, and coarse-sized particles.

Each burgul quality has its particular uses in cooking. Fine-ground burgul is used in tabouleh, for a light background to salad vegetables; medium-grind for dishes like kubbeh, and the coarse grind for hearty dishes such as majadra (the burgul substituting rice) or shulbatto. We have many dishes that feature burgul, including this luscious recipe for bulgur balls in tomato sauce. 

Move over tabuleh, meet shulbatto

Shulbatto is a dish known around the Arabic culinary world, but hasn’t been made as popular to Westerners as, for example, tabuleh. This version comes from the Druze villages of northern Israel and Syria, via the Galileat culinary workshop organization.. 

It’s important to use coarse-grind bulgur wheat, as finer grades will cook up mushy.

Shulbatto, A Druze Bulgur Pilaf

Serves 4 generously.

Ingredients:

2 zucchinis 

1 large onion

3 ripe tomatoes, hand-grated whole, or peeled and blended – may use 1 cup canned chopped tomatoes instead.

1 medium eggplant

1 medium red bell pepper, or 1/2 cup roasted red peppers from a jar

OPTIONAL: 1 hot red pepper, for those who like it spicy

1 cup room-temperature water

1 cup coarse-grind bulgur wheat

1 teaspoon ground cumin

1 tablespoon baharat spice (found in Middle-Eastern shops, or make your own from Karin’s baharat recipe)

Salt and pepper to taste

1 cup olive oil

How to make Shulbatto

Chop the zucchinis, onion, eggplant, bell pepper and optional hot pepper into medium cubes.

Put the onions in a large saucepan and cover them with the olive oil.

Sauté the onions over high heat, until transparent.

Add the eggplant. Sauté 10 minutes, until it begins to soften.

Add the zucchinis, bell pepper and optional hot pepper to the pot. Cook and stir another 15 minutes, until everything is cooked through but not mushy.

Add the grated tomatoes, with their juice, plus one cup of water.

Cover the pan and bring to a simmer. Continue simmering 5 minutes.

Pour the bulgur and spices into the pot, stirring to distribute. 

Reduce the heat to low and cook 10 minutes longer. 

Taste to adjust seasoning.

Remove from the heat, but let the dish rest, covered, about 5 minutes. 

Serve with a leafy salad, halves of hard-boiled eggs, and a dish of olives.

Desalination investments from unlikely business partners

Just around the beginning of Covid something remarkable happened. After years of cold shoulders, the Arabian Emirati nations which make up the United Arab Emirates declared peace and friendship with Israel. It was a first from the Arab world to thaw out decades of boycotts and sanctions. While Israel has official peace with Jordan and Egypt, nothing could have prepared Israel for the open arms it received from Dubai.

The United Arab Emirates and Israel share ambitions in renewable energy and both face extreme water shortages. Some of the early partnerships in business and cooperation will be in these areas. Just recently Masdar, the net zero energy city that really has yet to take off, announced it will work with Israel on desalination technology. 

Desalination is mainly constrained by filters and the amount of energy needed to create the end product. Out of necessity Israel has developed an industry out of filter technology and renewable energy. 

“I can tell you that Masdar is already active in Israel and we are exploring opportunities to help Israel reach very ambitious targets,” said Mohammad El Ramahi, director of asset management and technical services for Masdar’s clean energy division in the United Arab Emirates. He was speaking at a panel discussion with Israeli and US energy executives at the US Pavilion at Expo 2020 Dubai.

He explained how Israel and Jordan, which have an official peace treaty, but luke warm relations, want to use renewables in their energy mixes to 30 per cent by 2030.

“That is 15 gigawatts, which opens a great horizon for developers like Masdar to compete … against price and against value creation for the best welfare of the Israeli people and also create opportunities,” said El Ramahi.

Following the announcement the UAE, Jordan and Israel signed an agreement to develop a renewable energy and desalination plant in Jordan to slow climate change and add to the growth of clean energy in the country.

According to The National, the partners plan to build solar photovoltaic plants that can generate 600 megawatts of electricity in Jordan. The electricity will be exported to Israel, which will supply 200 million cubic metres of water from a new desalination project.

Feasibility studies for the project will begin in 2022.

The UAE became the first country in the Arab world to pledge to reach net zero emissions by 2050. Israel also pledged to become carbon neutral by the same year. Saudi Arabia pledged to be carbon neutral by 2060.  All promises are at least 30 years away which seems too late.

But there is hope for peace perhaps: “The Abraham Accord not only opens horizons for [the] UAE and Israel, but also for US companies and for Jordanian companies to collaborate and explore opportunities in the spectrum of not just in renewable energy but also in sustainable water desalination,” said Mr El Ramahi.

Masdar not only built a model city in the United Arab Emirates, it’s also an energy company. They are an early developer of renewables in Jordan and their first overseas investment in a Jordanian wind farm in 2013. It also developed Baynouna, a 200MW single solar energy project located east of the capital Amman, which became operational in 2020.

Rory McIlroy is an Irishman who loves being green –– and not just the color. While playing in Dubai, the United Arab Emirates this fall, he pledged he would become more green ecologically speaking by slashing his environmental footprint. Golfers who play professionally are jetsetters by nature, but that doesn’t mean they can’t do more to cut down on carbon emissions from private travel, the greens they play on and through the hotels they choose to stay, he tells Golf Digest when he was in Dubai. 

He told the magazine, “Two years ago, after I won in China – at the WGC-HSBC Champions – I flew back home privately. It was just me on the plane and a massive sense of guilt came over me. This can’t be good, I thought.” 

But the golf odds weren’t against him: “When the R&A and the USGA brought out their distance insights report, the best thing they spoke about was the sustainability aspect of golf and how to make the footprint of courses smaller. So that is certainly something we can all do.”

The GEO Foundation is involved in making golf more sustainable and for McIlroy’s part he is offsetting his travel by buying carbon credits, which cost him about $200,000 extra every year.

“It’s something I have a conscience about and I take it seriously,” he told the golf lifestyle magazine. “Especially when you see some of the weather events that are happening. This isn’t something I’ve talked to many of the players about. But for my own peace of mind, I know that when I do travel I’m not doing it to the detriment of the world that we live in.”

We’ve covered golf going green on Green Prophet in the past and while golfing isn’t the most famous Middle Eastern or Levantine sport it is something that tourists typically like to do when they visit Egypt, Jordan or the United Arab Emirates. 

Some newer housing developments in Cairo, for instance, have mirrored suburban or gated communities in the United States, and the Cairo development New Giza most likely would not have impressed the Pharaoh with its luxurious views to the pyramids from the golf green.

The Awassi is a local sheep breed in South-West Asia originated in the Syro-Arabian desert. Other local names can also be Arab, Baladi, Deiri, Syrian, Ausi, Nuami, Gezirieh, or Ivesi. It is a fat-tailed type and is multi coloured: white with brown head and legs. The ears are long and drooping.

A local Levantine artist Adrian Pepe in Beirut, Lebanon explores the ancient textiles produced in the Levant region from the sheep. He works to unearth ancient craft practices and to weave into them a contemporary message.

Throughout his work, he performs a sort of creative shadowgraphy, crafting objects and experiences as tools to enable an open discourse on materiality, our morphing cultural landscape, and our present condition.

This body of work begins with an ancient animal: the Awassi sheep, bred in the Levantine region for over five-thousand years. This particular breed of sheep is a central figure in the human narrative, traditionally within the contexts of biblical fables and ritualistic practices of Abrahamic religions.

Through the process of spinning, weaving, braiding, and felting, the wool is transformed into artefacts laden with perspiration and emotions, mythologies and symbolism.

It is an “intimate association that transpires between the craftsperson and the crafted object, as the raw material becomes large scale tapestries that summons themes of trans-corporeality and biocentrism,” says Pepe, who has also worked with human hair.

Dispelling the hijab myth

I was having breakfast with an American friend who’d come to visit me in Bahrain. Together we sat in a hotel restaurant, windows on all sides looking down on the city hurtling past below. We’d come there to meet with a woman from an Arabian Gulf state I was interviewing for my book, Hear Us Speak: Letters From Arab Women, which paints a portrait, through a series of interviews, of what life is like for Arab women today.  This includes the difficult consequences they face due to a lack of legislation protecting some of their most basic human rights. 

When we saw the woman walking toward us, my friend turned to me and said quietly, “She’s completely covered. I didn’t expect a woman wearing a hijab would be able to speak openly about these subjects for your book.”

This notion—that being modest and conservative means you must be silent and submissive—is by far the most incorrect perception the West has of women who cover their faces and heads.  On top of that, as my friend affirmed, Westerners often assume that a woman in a hijab or abaya is not only submissive, but that she is also being controlled or abused.

As a Bharanian woman and the mother of a beautiful young adult daughter, I know that this is simply not true. I know that women who choose to wear hijabs or abayas have opinions and character, just the same as any woman in the West. Their choice to cover their hair and dress in a more conservative fashion is just that: a choice, rooted in their beliefs.  

I meet women every day who are living proof that a scarf covering the hair does not signify helplessness. Often, it is quite the opposite. One such woman is a Saudi media icon I interview in Hear Us Speak. She began her career teaching at the university in Riyadh.  At the time she was  considered something of a rebel—she was a muthajba, meaning she wore the conservative head scarf and modest clothing.  Yet she didn’t believe in the existing structures and was always challenging her students. 

One day she was invited to be a panelist on a talk show—the Arabic equivalent of “The View.” She saw it as a chance to be a pioneer.  The university’s administrator told her, “If you take this job, I will fire you.” But she fought back, saying, “You have male lecturers who are not fired for being on television. I should be awarded the same rights.”

Some conservative women in Saudi Arabia did not accept her. They called her kafara, which means infidel, a woman of no religion. And yet many Saudi women thought it was wonderful to have a Saudi woman representing them on this pan-Arab talk show panel.  

The TV show experienced huge success. It was the number-one talk show for seventeen years, and received numerous accolades and awards. She had taken a chance, and decided to be a pioneer facing all the consequences, head on. Today, she says she’s very glad she did.

She’s also very proud to wear a headscarf. She told me: “I wear this by choice, and I believe in it. It might not be for everyone, but it is for me. I never doubted the concept of wearing a hijab.”  And she is not alone.  Countless Muslim women, including in the Arab world, feel proud and even empowered wearing a hijab.  There are many reasons, including solidarity, national pride and faith. As this article in The Conversation explains, “some Muslim women in America may wear the hijab as a way of asserting their pride in the face of Islamophobia.”

The woman my friend and I met in the hotel told us:  “The strength of a woman has nothing to do with whether or not she chooses to cover her hair. There is no correlation. Wearing a hijab (headscarf) does not mean a woman is submissive. I have friends who wear it, and it’s perfectly normal. There are many different reasons a woman might wear one—it could be religion, family influence, cultural influence. But it does not take away her strength.”

My hope is that rather than focusing on the hijab and the myths surrounding it, the Western world will become aware of the far more real and pressing issues Arab women face today: the difficult consequences of a lack of legislation, including a lack of legal protection in all areas of society, from business to family life.  I wrote Hear Us Speak to bring these issues to light.

WAW machine dispenses kindness in Dubai

The WAW vending machine dished out acts of kindness like fortune cookies. It is part of a bigger idea to bridge the cultures of the West to the Middle East.

We turn to vending machines to offer us a quick fix: a hot chocolate, a pack of ear buds, a bag of chips, or a gold bar if you are in the United Arab Emirates. There is even a kibble vending machine for stray animals. But two Emirati female friends thought of using the vending machine concept to poke a bit fun at their local culture and also to dispense acts of kindness.

They started an Instagram project in 2020 during a lockdown and their culture-connecting Wild Arab West account has grown into a clothing and lifestyle business featuring products that fuse the east and the west. The Arabian Middle East culture is not commonly known to poke fun at itself although here and there standouts appear like No Woman No Drive from Saudi Arabia. 

Their interactive installation in a vending machine was on display at Dubai Design Week. And it will compliment you in Arabic and English and aims to improve mental health. 

At the press of a button, a small, colored box delivers cards from a vending machine with sayings like “I would give up coffee for you” and “Has anyone told you how great you are?” written on them.

Some parts of the installation aim to explain what’s going on between the lines in the Middle East, like “chicken nugget” an expression for a local who speaks and acts “western”.

Stationed streetside at Dubai Design District, the WAW Machine churns out compliments in Arabic and English, seeking to spread some positivity and put a smile on people’s faces.

“There was just last month mental health awareness week, and it’s definitely something that we wanted to focus on, especially now that everything’s going back to normal regarding COVID,” cofounder Almidfa told Al-Monitor, a local newspaper.

“We felt like we needed to start off with something positive. Our main aim behind all of our initiatives is basically to brighten people’s day and just lift people up because I feel, especially after COVID, we really need some self-love and to be kind to one another.”

WAW went on to exhibit artworks related to their “Wild Dictionary” series, which Almidfa describes as the “Urban Dictionary of the UAE.”

They take every day Arabic words or pop culture references and give each an English translation so everyone can understand it. Some of these words are printed on merch you can find in their online shop.

Imagindairy creating milk protein in a lab, announces completion of a $13M seed round. The funding was led by MoreVC in Israel. Not long ago Leonardo Dicaprio invested in a meat-alternative company in Israel, Aleph Farms. Foodtech is on a roll in Israel.

Imagindairy imagines a future of milk without udders and methane gas.  The company creates the same kind of milk protein found in cow milk but without the animal. They use fermentation.

More and more consumers shy away from bovine milk for health reasons, climate reasons, and animal rights leading to a growing desire for oat milk, soy milk, and almond milk. But most who have grown up on milk still yearn for the cow version in cereal, cheese.

Eyal Afergan, co-founder and CEO of Imagindairy says: “The market is eager to develop new dairy analogs based on our animal-free proteins. It’s hard for people to make big changes, especially when it comes to the foods they enjoy, but when there’s an alternative with the same flavor and experience that is more aligned to their values, it becomes easy.”

Imagindairy is currently collaborating with leading dairy companies, offering a complete range of dairy-free proteins.

Imagindairy feeds microorganisms instead of cows, and the select microorganisms the company employs are up to 20 times more efficient than cows at converting feed into food. This offers food system resilience, allows for complete sustainability, preserves the natural ecosystem, and promotes animal welfare. It also eliminates the greenhouse gas emissions produced by dairy cows.

The result: highly functional milk proteins that taste great and have the same texture, flavor, and nutritional value as milk from cows.

Strauss Group, Entrée Capital, S2G Ventures, Collaborative Fund, New Climate Ventures, Green Circle Foodtech Ventures; Emerald Technology Ventures and Pierre Besnainou joined the investment round. 

But like the questions Beyond Meat and Impossible Foods is facing: digestibility, questionable carbon footprints currently undisclosed, and a needed leap in technology –– can Imagindairy delivery on all the promises? If they are recreating new milk from products like soy or pea proteins, maybe. This is what Beyond Meat and Impossible Foods does. 

But there is a whole other class of meat alternative companies attempting to grow meat in a lab on a scaffold so that it is made from real meat proteins and bleeds and tastes like meat.  OSI’s Impossible Foods, and Aleph Farms are in this class of products.

This read-worthy article in the New York Times challenges the notion that  cultured meat woudl ever work: “to be a meaningful climate solution [it] would require several scientific breakthroughs worthy of many Nobel Prizes — and in the next 10 years, not 30.”

Some say lab-grown meat won’t ever be able to start displacing conventional meat in time — or perhaps ever. David Humbird, a Berkeley-trained chemical engineer who spent over two years researching a techno-economic assessment of lab-grown meat, believes the industry faces extreme, intractable technological challenges.

In interviews with Joe Fassler of The Counter, he said it was “hard to find an angle that wasn’t a ludicrous dead end.”

So can lab-grown burgers and along with that notion, lab-grown milk save the world? Maybe. Today a pack of Beyond Meat sausages costs multiples more than the same product made from real meat, about $15 USD (where I live) and the meat version about $5. A 1L carton of milk costs $2 and for the same size high quality out milk $5.

The idea of meat alternatives tasting realistic and being affordable is only within reach for the wealthy today.

We also might want to ask ourselves just how healthy lab-created products are for our gut biome and overall health. Wouldn’t it be better to eat less real milk (maybe goat?) and real meat, and keep one’s diet unprocessed and simple in every single way. Sourcing food from regeneratively grown farms? Whenever I eat a Beyond Meat product my stomach really isn’t very happy. What about you?
