Two-thirds of the frozen fish sold in Israel is imported from China. Despite complaining that frozen fish is tasteless, Israelis are resigned to paying for the 20 percent of water turned ice that is supposed to protect the fish. It then emerged that Chinese fish has been infused with water and STTP, or sodium tripolyphosphate, to make the fish seem heavier than it is. STTP is toxic to lungs and has other insidious side effects, but it is hidden behind the seemingly innocent label E451.
