Buildings are a massive climate lever: in 2022, the buildings and construction sector accounted for about 34% of global final energy demand and 37% of energy- and process-related CO₂ emissions. Cutting a hotel’s operational energy and decarbonizing its supply are central to any serious sustainability plan.</span></p>

This means that a hotel’s restaurant can directly shrink its overall emissions intensity with relatively simple menu adjustments. </span></p>
<p><span style="font-weight: 400;">On the financial side, plant-based staples such as legumes, grains, and seasonal vegetables are often more cost-stable and less resource-intensive to store than animal products, which are subject to volatile pricing and stricter handling requirements. The result is a kitchen that not only serves climate-friendly meals but also improves cost efficiency through reduced ingredient expenses, longer shelf life, and simplified food safety processes.</span></p>
<h2><span style="font-weight: 400;">Zero-Waste Kitchens &amp; Plant-Based Dining</span></h2>
<p><span style="font-weight: 400;">In 2022, more than one billion tonnes of food were wasted globally—about 19% of food available at retail, food service, and households. Food service accounted for around 28% of this total. Food loss and waste represent an estimated 8–10% of global greenhouse-gas emissions. Cutting waste is therefore one of hospitality’s most immediate climate levers.</span></p>
<p><span style="font-weight: 400;">Plant-forward menus amplify the gains. Large-scale research shows that plant-based foods typically have far lower greenhouse-gas, land, and water footprints than meat and dairy. A landmark meta-analysis by Poore and Nemecek demonstrated order-of-magnitude differences across products: shifting protein from beef and cheese toward legumes, grains, and tofu drastically reduces per-meal impact.</span></p>
<p><span style="font-weight: 400;">For cafés and breakfast service, the swap is visible per cup: cow’s milk has on average about three times the greenhouse-gas emissions of plant-based milks, with higher land and freshwater use per liter. Making oat or soy the default option is a small operational change with significant impact.</span></p>

<p>That perhaps was the mood for a new conceptual hotel in Iran designed by Margot Krasojević and uses ancient Iranian methods for desert survival using underground flowing water, called the qanat. In Arabic, this type of channel is more often called a kariz.</p>
<p>Long-ago tribesmen found underground springs in the foothills of the region of Iran and Oman, and engineered a technology that channels the water over the land, irrigating farms and oases and supplying households with water as needed. Although some say that qanat is a concept 3000 years old, others claim 5000 years. But they were definitely engineered before the Roman aqueducts were built. </p>

<p>The hotel, if it were built, would encourage a more even distribution of water further into the desert to water remote farms. </p>

<p><a title="Margot Krasojević" href="http://www.margotkrasojevic.org/">Margot Krasojević</a> completed her architectural education at the Architectural Association School of Architecture and University College London and worked with <a href="https://www.greenprophet.com/tag/zaha-hadid/">Zaha Hadid Architects</a> as lead undergraduate and masters studio director for sustainable design programs, at UCL, University of Greenwich and University of Washington.</p>
<p>She has since opened a multidisciplinary architectural design studio focusing on integrating environmental issues, renewable energy and sustainability as part of the design process. She is currently working on projects in Asia, where she is integrating and harnessing renewable energy as part of a buildings service infrastructure. </p>

<p>Throughout the dry regions of Iran, farms and settlements are supported by the ancient qanat system of tapping water at the heads of valleys and then conducting the water along underground tunnels by gravity, often over many miles. <a href="https://www.greenprophet.com/2020/10/the-uae-and-omans-3000-year-old-irrigation-system/">The Romans had aqueducts, the Iranians qanat</a>.</p>
<p>Each <a href="https://www.greenprophet.com/2020/10/the-uae-and-omans-3000-year-old-irrigation-system/">qanat</a> comprises an almost horizontal tunnel collecting water from an underground water source into which a mother well is sunk to the appropriate level of the aquifer. <a href="https://www.greenprophet.com/2020/10/the-uae-and-omans-3000-year-old-irrigation-system/">Qanat were also built in Oman, and countries like the United Arab Emirates</a>. </p>
<p>Well shafts are sunk at regular intervals along the route of the tunnel to enable removal of debris and allow ventilation. These appear as craters from above, following the line of the qanat from water source to agricultural settlement.</p>

<p>The water is transported along underground tunnels, so-called koshkan, by means of gravity due to the gentle slope of the tunnel to the exit (mazhar), from where it is distributed by channels to the agricultural land of the shareholders.</p>
<p>The levels, gradient and length of the qanat are calculated by traditional methods requiring the skills of experienced qanat workers and this wisdom has been handed down over centuries.</p>
<p>Many qanats have sub-branches and water access corridors for maintenance purposes, as well as dependant structures including rest areas for the qanat workers, public and private hamams, reservoirs and watermills. The traditional communal management system still in place allows equitable and sustainable water sharing and distribution.</p>
<p>Margot Krasojević&#8217;s eco hotel pays homage to the qanat and will teach visitors from around the world that low-tech may still be more inventive than the technology that runs on polluting oil. </p>

<p class="p1">Getting there: Wadi Feynan is located about 200 miles southwest of Amman and represents one of the regional centers of the ancient metallurgy in the Middle East. The industrial-scale copper production started in the Early Bronze Age and continued during the Roman-Byzantine Period while the final exploitation of copper occurred in Mamluk Period.</p>

It is also considered a <a href="https://www.greenprophet.com/2009/07/jordan-feynan-eco-lodge/">top 50 eco hotel in the world</a>. There’s no electricity in the hotel except for the kitchen, bathroom and showers. You won&#8217;t find plastic bottles, meat and alcohol &#8211; though you can bring your own.</p>

<p class="p1">The hotel is built in the middle of nowhere between the <a href="https://www.greenprophet.com/2011/04/jordan-solar-bedouin-tent/">Dana Reserve</a> on the mountain plateau and the valley where only four-wheel vehicles have access. The nearest road is miles away and the area is tough but good for a rugged hike and stargazing in the evening.</p>

<p class="p1">Rooms are nice but minimalistic while hefty price tag could be a big turn off for people used to luxurious accommodation or those who would rather choose one of many Bedouin camps in Wadi Musa and Wadi Rum. However, most visitors won’t stay more than a few days due to complete isolation from civilization. On the other hand, tourists who enjoy solitude can get the full board of breakfast, lunch and dinner. For most visitors, breakfast and dinner are included in the offer.</p>
<p class="p1">In the wintertime, the lodge can be freezing due to the lack of electricity so the hosts provide very thick blankets and hot water bottles. During the summer, the main issue is the scorching heat as temperatures range between 38 and 45 Celsius for most of the days between June and September.</p>
<p class="p1">The best period for hiking is fall and spring.</p>
<p class="p1">When it was established in 2005 by Jordan&#8217;s Royal Society for the Conservation of Nature, the Feynan Ecolodge was to offer travelers, particularly hikers and young people, the opportunity to learn more about untouched wilderness, the ancient history of Wadi Feynan and local communities.</p>

<p class="p1">Built as traditional waystations that are scattered throughout the Middle East and Central Asia, the Feynan Ecolodge uses solar panels while the inner courtyard is designed for stargazing or meteor showers.</p>
<p><strong>In the Dana Biosphere Reserve</strong></p>
<p class="p1">At the lodge, hot drinks and non-alcoholic beverages are served while guests can bring their own alcoholic drinks but are advised to use them discreetly because Jordan is primarily Muslim and alcohol is not permitted. <p class="p1">Solar –generated electricity is used to light the bathrooms, kitchen, mobile phones and laptops. One can’t find an electric outlet in the rooms, but cameras, laptops and mobiles can be recharged at the front desk.</p>
<p class="p2">The lodge is smoke-free but travelers can go outside the lodge and smoke in a smoke-designated area. Because of the solar system, each room has enough hot water for the whole year.</p>
<p class="p2">The main outdoor activities are a sunrise hike, a sunset hike, the Feynan area plants, hiking between ruins of ancient civilizations and exploring famous mines. So hiking. Or doing nothing. Or exploring the area ion mountain bikes as well as interaction with local communities. Normally, hikes last between two and four hours and guests are escorted by a guide.</p>

<p class="p2">Spending a day with a local shepherd or cooking Arabic coffee, the weaving of a goat hair tent,preparing eye makeup called kohl and making arbood bread are interactive activities that would help a tourist understand the heritage of locals in Wadi Feynan. Highly recommended.</p>

<p class="p2">One of shortcomings of the lodge are flies especially in the summer and the lack of access for visitors with disabilities. The terrain around the hotel is very rough and the hotel has no elevator to the first floor.</p>
<p class="p2">To summarize, the ecolodge is an excellent place for travelers interested in meditation, extreme sports and physical isolation from modern civilization. Disadvantages are unreasonably high prices for a spartan accommodation, exposure to the elements &#8211;  hot summers and freezing winters &#8211; and a staff that barely speaks English.</p>

Nestled in a seaside grove of coconut trees planted by her husband&#8217;s father, and a deep commitment to planting roots Nuan Re-Ki built <a href="http://www.thekalasamui.com/">The Kala</a>,  eco-resort on the tropical paradise of Koh Samui in Thailand. And she built it for keeps.</p>
<p>Unlike other boutique and luxury hotels on the Gulf of Siam island Nuan and her husband wanted to build something to last, and for her children and grandchildren to inherit. This is the basis of sustainable eco-tourism, and The Kala is a great escape for anyone looking to dip into some traditional Asian aesthetics in Thailand.</p>
<p>With thick reclaimed teak wood furnishings, floors and fixtures from Chang Mai in the north, and local natural fabrics dyed with mango and other local plants, the only plastic you&#8217;ll find in the resort is garbage liners (no doubt recycled) and packaging on your min-bar snacks.</p>
<p>A fanatic who aims to create as little waste as possible, Nuan (below with her husband) says that new staff don&#8217;t always get the message.</p>

<p>This 37-room resort isn&#8217;t ecological in the western sense you&#8217;d expect: I mean it wasn&#8217;t built with a <a href="http://www.greenprophet.com/tag/leed/">LEED</a> guidebook, but was inspired by the simpler ways of Buddhism and influences from European environmentalism.</p>
<p>After staying there for two nights this past February with my family (husband, kid, mom and dad), I feel that this resort is light years ahead of most other so-called eco resorts.</p>
<p>While Nuan was influenced from her time working in Switzerland, it&#8217;s really an innate sense for protecting the earth and community that Nuan embraces, I feel.</p>
<p>Let me explain: you&#8217;ll find locally-made coconut soaps in your bathrooms and in the spa &#8211; all in locally-made ceramic dispensers. A gift shop in the lobby sells only handmade locally sourced products: you&#8217;ll find no Made in China junk trinkets there.</p>

<p>When you enter your room, you&#8217;ll feel Asia, but you&#8217;ll also feel home. Built with real materials and not veneers and plastics, the rooms at The Kala will age well as the resort lives on.</p>
<p>This resort is located atop a mountain a few minutes drive north of the popular Chewang Beach and a few minutes south of the equally crazy Lamai Beach. Stepping inside this resort is tranquil: and it&#8217;s like walking into a picture frame, with the sea as a the subject.</p>
<p>The existing greenery on the site was preserved when The Kala was built, and the resort uses only ecological methods for pest control.</p>

<p>Sticking to traditional Thai style, the couple very much had an input into integrating their boutique hotel buildings with the local surroundings when they worked with their architect.</p>
<p>They took a boat out to sea to see how the buildings could be built within the trees, while maintaining the integrity of nature. Neutral and natural colors were chosen to minimize the built environment pollution.</p>
<p>It&#8217;s zen modesty at its best.</p>
<p>Every room at The Kala has a sea view, and while some of them are stacked in units, you&#8217;ll feel complete privacy. The more costly rooms are private cabanas, with incredible outdoor showers, and tiny private pools.</p>
<p>I loved the cotton Japanese kimonos in the rooms (see my dad in one below), all the way to the cloth napkins served with room service and the bowl of fruit that awaits you when you arrive. Laundry service bags are also cloth, further giving you that feeling of home.</p>

<p>There are no plastic signs hanging all over the place inside the rooms calling you to buy things- signs that I tend to remove anyway and put in drawers for any length of stay in a relax-style hotel or resort.</p>
<p>There is lots to explore both inside your room and outside. Each room while similar has unique features from the next. My parent&#8217;s room had an Asian style seated area near their balcony, while ours had a remarkable sliding door-window that gave way to the bathtub. See me playing in the door below.</p>
<p>There is a maze of nature and treasures on the grounds: as you work your way down to the rocky shoals of the sea for a dip (snorkel or kayak perhaps?), you can also take a dip in the pool.</p>
<p>While the beach isn&#8217;t sandy, The Kala resort has a wonderful swimming launch pad from the sea, off some of the local volcanic rocks, which are weather worn and smooth, but not too slippery. It&#8217;s very private and couples could easily find their own romantic sea nook. I was with a toddler and walking down there was kind of frightening.</p>
<p>If you are going with a family, wait until your kids are at least four before feeling safe down at the beach. Most of Thai beach resorts aren&#8217;t little kid friendly, so keep that in mind.</p>
<p>Sea kayaks and snorkling gear are available for guests&#8217; use, along with a library, computers and free Internet.</p>
<p>I loved staying at The Kala, because I felt it was an authentic experience, built by authentic people who have built something to last. Of the ten hotels I stayed in the Samui Island region this past winter, The Kala gets the best grade. It&#8217;s highly recommended to stay there, especially if you like privacy, but also the ability to quickly dash off the craziness of Thai-style paries on Chewang or Lamai beaches.</p>
<p>Clientele ranged from cool Japanese to quiet Americans to excited Russians. I liked how it attracted Asian clients, because most of the other resorts we&#8217;d stayed at were favorites with just the Europeans and Americans. I guess it says something about the <em>nature</em> of the place.</p>

And it is easy to get around on foot. <p>Marrakesh features marvelous markets, warm people and boutique hotels waiting to be met:  I arrived to the Old City with little planning after sojourning at a conference in Rabat organized by the <a href="http://www.uri.org/cooperation_circles/detail/greenprophet">URI</a>. After Rabat, first I headed south to the <a href="http://www.greenprophet.com/2011/07/mt-toubkal-morocco/">Atlas Mountains hoping to enjoy some Berber hospitality</a>, which I did at the <a href="http://www.greenprophet.com/2011/07/kasbah-toubkal-morocco/">Kasbah du Toubkal</a>, a boutique Berber-UK-run resort held in the palms of North Africa&#8217;s highest peak.</p>
<p>After a couple days in the mountain cool air with good people, it was onwards to Marrakesh, and the heat hit me and my baby as we descended by taxi into the throbbing city that provides absolutely no mercy in the noon day sun. It was so hot it hurt breathing in. We refused the air conditioned taxis and tried to acclimate like a local. We were happy though when the driver arrived at the riad Dar Les Cigognes just outside the Royal Palace gates. A flock of nesting swans were perched in their massive fairy tale nests above us (<em>cigogne</em>s is swans in French), and when you walk in the door of this special riad the fairy tale simply continues. <span id="more-53784"></span></p>

<p>Green Prophet suggests readers to visit North African cities that are safe to help support the local people. In Morocco, choose riads over big name hotels that offer no personal touch: Riads (of which there are about 1,000 listed in the city for rent as guest houses), are traditional Moroccan homes, built around an inner courtyard and which shield the cities&#8217; residents from noise, heat and pollution –– the inner courtyard somehow funnels up to the sky, letting the goodness in, and keeping the less desirable out.</p>

<p>Entering the extremely boutique riad Dar Les Cigognes, we were treated with a traditional Middle Eastern tea, poured by someone who looked like a genie, and who disappeared quickly as the cup was placed down. The riad is large, and small at the same time – it encompasses two traditional homes, located side by side, and linked by a maze of hallways, and which has a total of 11 guest rooms available for occupancy. Each one is privately situated, and a great number of spaces in the riad which could have been turned into rooms are instead made for the guests to luxuriate in, for breakfast, lunch, afternoon tea, dinner, or into the wee hours of the morning.</p>

<p>An expansive patio on the roof, as well as an in-house massage and spa room, gives the weary traveler (you will get weary in Marrakesh in the summer when it&#8217;s really hot!), some much needed recoup time.</p>

<p>I was staying at the riad in the middle of June, and the outside temperature in the Marrakesh markets felt like 2000 degrees C, and not even human. The riad courtyard, though, even though it was open to the elements was liveable. Had I not been with a baby that I needed to supervise, I would have definitely enjoyed the facility&#8217;s books that are stocked in the rooms and around the riad. As for other guests to meet: There was a beautiful couple staying with us at at the same time –– she looked like a model from Britain, and he someone from a Gatsby party. While there were other guests also at the riad with us, you could barely hear a whisper.</p>

<p>The staff treat you like a much honored guest, remembering details about you that the sun outside might have otherwise erased from your mind, upon return. Accessible by car (most riads aren&#8217;t), the riad is minutes walking from the Jewish spice market, and about 15 minutes from the famous Marrakesh square.</p>
<p>The in-house chef also offers &#8220;local&#8221; cooking classes in the late afternoons. </p>

<p>I highly recommend Dar Les Cigognes. Staying there allows you to be part of the frenetic city without being deep inside it; the dreamy bedrooms transport you to another time in history –– real or imagined by the Swiss woman who designed them –– and the staff, and services including an in-resident chef –– will make it hard for you decide between the two: going out to the market for another adventure (maybe to find some eco-treasures like <a href="http://www.greenprophet.com/2011/07/recycled-tire-jugs-morocco/">recycled tires into genie bottles</a>), or having an adventure on your very own, in your room.</p>
